Coriander Rice Recipe

Coriander rice is healthy, refreshing, and nutritious greeny rice. This can be perfect recipe for your meal. It is a quick and easy to make veggy Indian recipe made out of Coriander leaves. It goes very well with raita, in particular cucumber raita. Let us discover how to cook coriander rice at home.

Ingredients Required for Preparing Coriander Rice Recipe

  • Rice – 1/4 Kg
  • Chopped Coriander leaves – 2 Cups
  • Elaichi – 2
  • Cloves – 2
  • Cinnamon – A small piece
  • Ginger Garlic paste – 1/2 Tsp
  • Badam – 10
  • Cashew nut – 10
  • Kismis – 10
  • Ghee – 2 Tsp
  • Cooking Oil
  • Salt

Method for Preparing Coriander Rice Recipe

  1. Clean the rice thoroughly and take it into a bowl.
  2. Now add rice equal to 1 and 1/2 quantity of rice.
  3. Cook the rice and keep aside.
  4. Clean the coriander leaves with water. See that all the water drains off and keep aside.
  5. Taka a kadai and heat cooking oil in it under medium flame.
  6. Now add cloves, elaichi and cinnamon to it and fry them for few seconds.
  7. Now add ginger garlic paste to it and mix well.
  8. Now add the kept aside chopped coriander leaves and fry it till the raw smell vanishes.
  9. Meanwhile take another frying pan and heat ghee in it.
  10. Add badam, cashew nuts, and kismis and fry them till they into golden brown color. Take them into a small plate and keep aside.
  11. Take a wide bowl and add kept aside cooked rice.
  12. Next add fried coriander mixture, and fried badam, cashew nuts and kismis to it the rice and mix well.
  13. Your Coriander rice is ready for serving. Serve it hot with raita.
